What have I been eating lately, you ask?  Salads!

Despite the cold temps (not to mention out-of-season produce), I’ve been eating all sorts of salads.  Cold salads, green salads, fruit salads…

And just because it’s winter doesn’t mean you can’t indulge in fruits and vegetables.  Just take advantage of the season’s best offerings and other foods that are in season ALL the time:

Winter Favorites:

-roasted winter squash or sweet potatoes

-segmented grapefruit or oranges; use in green salads with avocado and shrimp

-apple slices

-pomegranate arils

Year-Round staples:

-canned beans (all sorts!)

-cottage cheese, salsa

-nuts

-brown rice and other grains

Build your salad with a mix of veggies, grains and proteins, then top with your favorite dressing!
